Vegetable Casserole
1.Fit the middle rack in the oven. Preheat oven to 350 degrees.
2.Get a medium baking dish.
3.Using the vegetable slicer slice the onions, potatoes, eggplant and zucchini. Slice the tomatoes also.
4.Spice mix: in small bowl mix the rosemary, oregano, basil, pepper flakes, onion, salt and black pepper.
5.To assemble: place the onion slices in the bottom of the baking dish and sprinkle some of the spices and olive oil. Top with the potatoes slices and sprinkle some spices and olive oil. Top with the eggplant slices and sprinkle some spices and oil. Arrange the zucchini slices as well and sprinkle some spices and oil. Lastly, arrange the tomato slices and sprinkle the rest of the spices and oil. Sprinkle the cheese.
6. Bake the casserole for 30 minutes or until golden brown.
7.Remove the Vegetable Casserole from the oven and sprinkle with more cheese and serve immediately.

Instructions
