Pistachio Pretzels
1.In a bowl of a stand mixer place the butter and sugar. Fit the balloon whisk. Beat for 4-5 minutes until butter is creamy and fluffy.
2.Add the egg and vanilla extract. Beat until the egg disappears.
3.Fit the K beater and add the flour and pistachio. Beat on medium speed until dough is smooth and soft.
4.Form the dough into a disk and wrap with a piece of cling film. Chill for 1 hour or so.
5.Remove the dough from the fridge and let it becomes to room temperature.
6.Fit the middle rack in the oven. Preheat oven to 350 degrees.
7.Line 2 cookie sheets with parchment paper.
8.Cut the dough into 1-inch balls. Form each ball into thin rod and form into number 8 shapes or pretzel shape. Place in the cookie sheet. Form the rest of the balls into pretzels and place apart onto the sheet.
9.Bake the pretzels for 8-10 minutes. Transfer onto a cooling rack.
10.The frosting: in a medium size bowl mix the sugar, milk and vanilla until smooth.
11.Hold one pretzel with your fingertips and dip the top in the frosting to coat. Sprinkle some ground pistachio if desired. let the frosting dry and then serve the Pistachio Pretzel.
