Grilled Sandwiches
1.The dough: In a stand mixer bowl, put 3 cups of the flour. Add the yeast, salt, baking powder and sugar. Fit the dough hook. Beat on low speed for few seconds. Add the oil and milk. Beat on low speed until the dough forms. Add the rest of the flour gradually if the dough is very soft. Beat on low speed for 5 minutes until dough is smooth and elastic.
2.Shape the dough into a ball. Put the dough in slightly oiled bowl and cover with a cling film. Put the dough in a warm place for 60 minutes or until doubled in size.
3.Cut the dough into egg sized balls. Roll each ball into 4-5 inches rounds. Place the rounds in slightly oiled pan and cover with cling film. Leave for 10 minutes.
4.The chicken mixture: in a food processor, put the onion, garlic, salt, black pepper, ginger, coriander, paprika, olive oil and yogurt. Process on medium speed until smooth marinade forms.
5.Put the marinade in a bowl and mix in the chicken cubes. Cover the chicken and put in the fridge for 30 minutes or over night.
6.Heat an electric grill.
7.Thread the chicken into wooden or metal skewers.
8.Put the chicken on the grill and cook until well cooked.
9.Place the dough on the flat side of the grill and bake on both sides until puffy and lightly browned.
10.While warm, open the bread, fill with mayonnaise and put some lettuce. Fill the bread with grilled chicken and serve immediately.
