Green Beans Salad
1.Bring a pot of water with a pinch of salt to a rolling boil.
2.Cut the beans into 2-3 inches pieces. Put in the boiling water for 6-8 minutes until cooked but still crispy,
3.Mean while; fill a bowl with water and plenty of ice cubes.
4.Drain the beans and directly add to the iced water. Leave the beans until cooled completely then drain.
5.Slice the celery into thin slices. Slice the fennel and onion as well. Grate the ginger and set aside.
6.In a medium bowl, mix the lemon juice, vinegar, salt, black pepper and sugar. Add the onion slices and leave for 10-15 minutes.
7.Nuts Mixture: heat the olive oil in a skillet and fry the cashew, almonds, pistachio, raisins and sesame seeds for 2-3 minutes.
8.In a large platter arrange the celery, tomatoes, fennel, onions, and ginger in a decorative way. Distribute some of the beans. Repeat the step and then drizzle the onion marinade. Sprinkle the nuts mixture and serve the salad.http://www.manalalalemrecipes.com/recipe/chef-salad/
