Chicken with Vegetables
1.Fit the middle rack in the oven. Preheat oven to 350 degrees.
2.Cut the chicken into halves or as desired.
3.In a bowl, mix the yogurt, soy sauce, lemon juice, olive oil, paprika, turmeric, pepper flakes, coriander, cardamom, cumin, salt and black pepper. Add the chicken and stir well until chicken cover completely with the marinade.
4.In a large oven dish, put the onions, garlic, ginger, chilies, potatoes, carrots, half of the parsley and half of the cilantro.
5.Distribute the chicken pieces on the vegetables and drizzle the marinade. Sprinkle the rest of the parsley and cilantro. Cover the dish tightly with aluminum foil.
6.Bake the chicken and vegetables for 80 minutes.
7.Remove the foil and return the dish in the oven for more 5-10 minutes until chicken is golden brown.
